Something Like Chili – Beauty Bites

It’s like chili but with potatoes, peas and some other vegetables. Whatever vegetables you have in this unforgiving season called winter. This clean eating dinner recipe is comforting, delicious, good for meal prep and healthy and nutritious and I like it.

Not only because I made it, but because…okay who am I kidding? I can’t come up with anything else. Thought for like one minute and I saw a dessert in my mind. I love it because I made it and it tastes good.

Me me me, I am perfect. Well, not anymore. Because exactly on New Year’s eve I twisted something. Not an ankle, but something else on my foot. As you can tell I am very well-versed in anatomy.

Something else I am very well-versed at is naming recipes as you can tell from the title here. Let me tell you it’s pretty hard to talk about comfort food while eating radishes. Which I am doing right now, because I know more raw foods can speed up the healing process. And I need that foot to go on walks.

New Cooking Skills

Let’s get to the chili recipe. This meal is really easy to make for dinner, for meal prep, whenever you want it.

One thing I learned last year is that to make dinner you don’t always have to time the ingredients and put them one after another in intervals as if you’re a magician trying to abracadabra something.

You can just put all ingredients into the pot at the same time, bring them to a boil, let them simmer and in 30 minutes, the magic happens anyway. It’s like AI. It’s going to figure itself out. And it always tastes edible. And when you slap some garlic sauce on it, it’s even better.

So, this is pretty much how I made this healthy chili recipe. Well, forgive me for calling it chili. It’s more like the moussaka my grandma made. Something in between. It’s like a Mouchili. Told you, I’m very good with titles and names. It’s lucky that I’m pretty, humble and have talented hands.

Now here’s what you need!

ingredients

Mouchili Ingredients

  • ground beef
  • potato
  • carrot
  • onion
  • garlic
  • spices – paprika, chili powder, cumin, oregano, turmeric
  • tomato paste
  • frozen peas and green beans
  • whatever vegetables you want to use up (I had some broccoli and cauliflower that I threw in at the end)
  • water or stock

And I want you to know that you can use whatever you have or love. This will be different but great with sweet potatoes, even butternut squash, some lentils or whatever you feel like.

How To Make Something Like Chili

I’m telling you, use this math equation:

dump + bring to a boil + simmer*(for 30 minutes) + µ = dinner.

I tried to make a pi sign, but couldn’t figure it out on the keyboard, so µ will have to do.

Okay, but before you start simmering you will need to saute the ground beef with the onions and spices. Then add in the rest of the ingredients, cover with a lid and boil. Once boiling, reduce and simmer at low heat for half an hour. If needed, you can add some water or stock in the process – I didn’t need to.

While the 30 minutes are running and we’re getting older, you can make a garlic sauce either with soaked cashews or with yogurt as well as a small salad. That’s at least how I like to enjoy these types of meals sometimes. Other times I just use a spoon and am good with it.

Garlic Sauce

This chili recipe will go great with a garlic sauce. You can make a very easy batch by combining 1/2 cup yogurt with 2 minced garlic cloves and salt. Add some dill if you want to make it a bit more fresh.

If you want to make it dairy-free, you can blend 1/3 cup cashews with 1/3 cup water, juice of 1/2 lemon, salt and 2 minced garlic cloves. It’s similar, but I like the yogurt better to be honest. And yes, I’m eating some yogurt now, but it’s either from sheeps or goats milk. Never been a fan of yogurt, but I started craving it last year, so I’m eating it more often now. So far, so good!

Ingredients

  • 2 potatoes, in small cubes
  • 1 carrot, chopped
  • 12 oz/ 340g ground beef
  • 1 tbsp chili powder
  • 1/2 tsp cumin
  • 1 tbsp paprika
  • 1 tbsp oregano or mint or basil
  • 3 garlic cloves
  • 1 onion, thinly chopped
  • 2 cups water or stock
  • 1 cup blended tomatoes (or tomato sauce)
  • 1 tbsp olive oil
  • 2 tbsp tomato paste (or as much as desired)
  • 1/2 cup green peas or green beans, frozen (if desired)

Additionally

  • parsley
  • 2/3 cup more seasonal veggies (cauliflower, broccoli or zucchini during summer) – if desired

Instructions

  1. Saute the ground beef with olive oil, breaking it apart with a spatula for about 1-2 minutes. Then add in the chili powder, paprika, oregano and cumin. Add in the onion and one clove of garlic and stir together for a few more minutes. 
  2. Stir in the tomato sauce and the tomato paste, add salt, pepper and carrots and potatoes. Add the water and the frozen peas. Cover with a lid and bring to a boil.
  3. Then, reduce heat to low and let simmer for 30 minutes. If at any point needed – add a little bit of water or stock, I personally didn’t need to do it.
  4. Take the lid off and add in the additional vegetables and the rest of the garlic. If needed add in salt and pepper. Let simmer without a lid for 5 minutes.
  5. Garnish with some parsley or herbs of choice and enjoy!
