No Bake Healthy Pecan Cookies

These healthy no-bake pecan cookies are SO amazing. They can be a great easy meal prep snack or dessert to grab whenever you need chocolate and you don’t even need to turn on the oven. My favorite kind of cooking. Basically, throw ingredients into a blender and call it a day. Well, you will also need to shape them, but let’s save the tough for last. For now let’s focus on how pretty these chocolate pecan cookies are, even without baking.

Not only are they super tasty, but having one of these cookies a day can raise your fiber, magnesium, iron and zinc intake. Which are nutrients many of us could use more of.

I was heatedly debating with myself whether or not to name these healthy chocolate pecan walnut oatmeal espresso no-bake cookies, but I spaced out while reading the words out loud and decided most people won’t have the patience for it either. So, let’s get started.

For The No Bake Healthy Pecan Cookies

You will need a blender, nuts, oats, some maple syrup or honey, dark chocolate, some coconut oil, pinch of salt and espresso or if you’re not a fan of coffee – water.

How To Make The Healthy Pecan No-Bake Cookies

Simple!

Add the walnuts, pecans, oats, maple syrup and cinnamon, pinch of salt to a blender and pulse. Then add in a few tbsp of espresso to a blender.

Pulse again until you get a uniform cookie dough. Taste and if needed add a bit more espresso (or water) or maple syrup (keep in mind that the chocolate drizzle will add some sweetness too!).

Spoon the mixture onto a plate or a baking sheet lined with parchment paper and shape balls, then press with your thumb to shape the cookies.

Add chopped dark chocolate to a microwave-safe bowl and melt in 30s intervals, I needed 1 1/2 intervals to be exact. Mix the chocolate with coconut oil until melted together.

Drizzle the chocolate over the cookies, I filled the thumbprint with chocolate too.

Leave in the fridge to firm up for about an hour and enjoy!

I usually let them soften for 4-5 mins at room temperature, because the chocolate does get too firm and I find them more enjoyable when they’re not right out of the fridge.

How To Store

Place the cookies into an airtight container and lock in the fridge until you need them again.

Options

There are many things you can change about the cookies and the recipe will work just as well, here are some things I’ve tried:

  • use only pecans without walnuts (or just walnuts)
  • no coffee – water will do just as well for the texture without adding the coffee flavor
  • honey or other sweetener in place of the maple syrup – these do come with different degree of sweetness and flavor, so you will need to taste test after blending once (start with 1 spoon)

Ingredients

  • 1/2 cup pecans
  • 1/2 cup walnuts
  • 3/4 cup 1 tbsp oats
  • 1 tsp cinnamon
  • 2 tbsp maple syrup (to taste)
  • 3 tbsp espresso coffee (or water)
  • Pinch of salt
  • 1oz/30g dark chocolate
  • 1/2 tsp coconut oil

Instructions

  1. Add the walnuts, pecans, oats, 2 tbsp maple syrup and cinnamon, pinch of salt to a blender and pulse.
  2. Add a few tbsp of espresso or water and pulse again until you get a uniform cookie dough. Taste and if needed add a bit more espresso (or water) or maple syrup (keep in mind that the chocolate drizzle will add some sweetness too!).
