Well, this is basically, apples sliced in circles, dipped in a batter of eggs and spices and then lightly fried on the stove. It’s really good and it’s the best lower-calorie option when you’re craving French toast.
If you don’t have a huge appetite in the morning – it’s great for breakfast, but you can also have it for dessert or a snack.
Healthy French Toast Ingredients
And you can count the gluten-free ingredients for the recipe on the fingers of one hand! That’s assuming you have a hand with seven fingers, otherwise – use both hands and count to seven. Here’s what you need to make this healthy recipe for French toast:
Apples. You can use any type of ripe apples to make this breakfast, as long as they’re sweet. We all know an apple a day keeps the doctor away, and well, if you’re like me and hate them, that’s going to be your way of eating your apple a day. Other than being hated by me, apples are actually a great source of fiber, and they have some vitamin C and potassium. Impressive, I know.
Almond flour. And that’s blanched almond flour…(I actually wrote bleached almond flour and I’m so embarrassed about it. But, I got over it quickly.) Almonds are rich in vitamin E – an essential fat-soluble antioxidant that is important for the right functioning of your cells. Almonds also have a good amount of magnesium and protein.
Egg. No French toast can go without an egg.
Cinnamon. It is an essential part of the batter when making French toast! Cinnamon adds a beautiful flavor and is good for you as well. It’s an anti-inflammatory spice and it’s also shown to have anti-cancer, anti-diabetic, antioxidant and antibacterial effects.
Other ingredients you’ll need: dairy-free milk of choice, vanilla and coconut oil for the frying.
How To Make Healthy French Toast
So not only is it healthy and gluten-free, this apple French toast recipe is incredibly easy to make as well.
Here’s the to do list:
- Wash and slice an apple in circles, they shouldn’t be too thick or too thin. Use your best judgement here, I don’t really have a measuring tape. Slice in circles as well as you can and if you can’t get a circle somewhere (because apples do have a core – not like me!) – do a half circle or quarter circle…Basically follow the phases of the moon. Avoid the crescents.
- In a bowl mix the almond flour, egg, some milk you chose, cinnamon and vanilla. Mix until you get a batter without any clumps in it.
- Let each apple slice soak in the mixture for about a minute. Be sure to not make the coating too thick – otherwise it can fall off when you’re flipping them later.
- Heat a pan suitable for making pancakes and grease it very well with coconut oil or another oil of choice that doesn’t have a strong scent (olive oil won’t be good here). Arrange apple slices in a way that allows you to flip them easily (so not too close together).
- Fry for a few seconds at medium on each side and flip carefully.
- Transfer French toast to a plate and enjoy!
How To Serve
I usually love French toast with just a little bit of honey or maple syrup on top, so that’s what I did with this gluten-free recipe as well. I also sprinkled some cinnamon, because I wanted to impress myself.
You can also try fresh fruit like berries or if you’re making it for dessert – serve with some vanilla ice cream.
