Oat Cherry Crumble Ingredients

Cherries. And this is important: we need sweet, ripe cherries. We won’t be doing much to them, besides washing, pitting and chopping, so they need to taste good.

Oats. And we’ll use the blender to turn them into ground oats. Yes, you can probably do oat flour too.

Almond flour. Fine, blanched almond flour, that’s the one we need.

Coconut oil. Extra virgin to add that beautiful smell to the crumble too!

Maple syrup. To add the sweetness to the crumble. You could also use honey or another liquid sweetener that is on the healthier side. In my experience brown sugar or coconut sugar don’t do a good job for this crumble. Did you hear me coconut sugar? You’re fired.

So, okay, did I try to make these into cherry crumble bars? Maybe. Okay, yes I did. But, it didn’t work. Don’t get me wrong – taste is amazing, but shape? Not so much. Therefore we just put some crumble on the bottom, some cherries in the middle and another layer on the top and bake this, mkay?

Here’s the step-by-step

Wash, pit and chop cherries in halves. Work through the batch you’ve got and remove stems and leaves. Discard the bad fruit. Then use a straw to push out the pits, you can also use a cherry pitter. Place the washed pitted cherries in a large bowl and make the crumble.

Ingredients

  • 3 cups cherries – wash, pit and chop

Crumble:

  • 3/4 cup almond flour
  • 3/4 cup ground oats
  • 3 tbsp coconut oil
  • 2 tbsp maple syrup
  • 2 tbsp water

Instructions

  1. Clean, wash and pit cherries.
  2. Crumble: Add almond flour, oats, coconut oil, maple syrup, a pinch of salt and water to a bowl and mix together.
  3. Preheat the oven to 350F/180C.
  4. Line a small baking pan with parchment paper and spread 1/3 of the crumble mixture on the bottom. Layer with cherries on the top and then add the last layer or crumble over the cherries, squeezing the mixture between your hands to shape the crumbs.
  5. Bake for 15 to maximum of 20 minutes or until the crumble is golden brown.
  6. Serve immediately with some milk of choice for breakfast or vanilla ice cream for dessert.
  7. Store leftovers in an airtight container in the fridge and reheat in the oven or enjoy cold.
