Healthy Apple Crisp Cake (Vegan & GF)

Never knew I needed a vegan apple cake so badly in my life until I stumbled upon this healthy apple crisp cake recipe in my mind after we did some apple picking in September.

This simple apple recipe is a mixture of a breakfast cake and apple crisp and it’s vegan, gluten free and an absolutely wonderful healthy dessert. You need some oats, apples, cinnamon, coconut sugar, walnuts and a bunch of other little ingredients to make it.

Healthy Apple Crisp Cake

The cake isn’t overly sweet, just the right sweetness and so it’s perfect for a quick and easy breakfast or a simple snack on the go. Or dessert, topped with your favorite ice cream. This is a great vegan meal prep recipe as you can store it in your fridge for 3-4 days. Reheat in the oven, drizzle some natural almond butter all over and dig in. And if you don’t feel like it – skip all that and simply have the cake and eat it too.

How To Make A Healthy Apple Crisp Cake

It’s an easy process and it doesn’t require much on your part. Just get all the ingredients out, mix, arrange and bake!

Ingredients

The main ingredients in this delicious apple dessert are oats and apples. Here are some other ingredients you’re going to need:

  • apple sauce or blended apples
  • oat flour – you can also simply grind some oats in your blender, nut grinder or coffee grinder
  • cinnamon – feel free to use more spices that go together like ginger or nutmeg
  • coconut oil
  • coconut sugar – can use other type of sweetener like maple syrup or agave or another type of dark sugar as well
  • walnuts or pecans – you can also use seeds if you can’t have nuts or leave them out
  • baking soda and powder
  • vanilla
  • pinch of salt

Instructions

Preheat your oven to 180C/350F.

If you don’t have apple sauce or oat flour start by making these by either blending washed and peeled apples or the oats in your blender, nut or coffee grinder.

Mix the apple sauce with the coconut sugar and coconut oil, then stir in the oat flour, vanilla, cinnamon, baking soda, baking powder and whole oats. Let this mixture sit for about 10 minutes to thicken.

Add in the apple chunks and some roughly chopped walnuts or pecans. You will get a pretty chunky apple mixture, and don’t worry, that’s the way it’s supposed to be.

Spread the apple mixture in a small baking pan lined with parchment paper.

Use the same bowl for making the crumble for easier cleanup. For the crumble combine the melted coconut oil with the coconut sugar, mix well, then stir in the oats. Add a pinch of salt and it’s ready. You’ll get a sticky crumbly mixture. Here you can also use maple syrup and no coconut sugar for a smoother consistency of the crumble, since the sugar doesn’t dissolve all the way in the coconut oil. I liked it, but might not be your thing.

Make the crisp by squeezing the crumble mixture between your fingers and spread them all over the cake. Time to bake!

The baking time depends on your oven, but it took me around 20-30 minutes to have this one ready with my oven. Make sure the crisp is golden brown, take the cake out, let it cool off – this will allow the crisp to become actually crispy.

How To Store

Store leftovers in an airtight container in your fridge for 3-4 days.

How To Serve This Vegan Apple Cake

You can serve this cake as is, I loved it drizzled with some almond butter. I can also imagine some good vanilla ice cream being a great partner to the cake too. Whatever you decide to do, I hope you enjoy it as much as I did!

  • ⅔ cup oats
  • 2 cups apples, chopped
  • 1 cup apples blended or apple sauce
  • ⅓ tsp cinnamon
  • ¼ cup and 1 tbsp Coconut oil
  • ½ tsp baking soda
