Make a batch of these healthy almond butter chocolate cookies for when you crave something sweet! This easy vegan cookie recipe is super tasty and uses only 7 wholesome ingredients: almond butter, almond flour, dark chocolate, and maple syrup, water and a pinch of salt.
I know almonds in all of their shapes! Why not just use regular almonds? I don’t know. Power? Control? Ego? No idea why I’m discriminating against regular almonds and making them cry here. But the recipe works.
You could say, I’ve been sharing way too many better for you dessert recipes lately and I promise, I am going to stop soon. Right after I get this one off my chest. It’s a small batch, don’t worry.
How To Make Healthy Almond Butter Chocolate Cookies
You need one bowl to make the cookie dough and then, you can eat that too, because you didn’t add any egg to it…If you don’t eat the entire thing maybe you’ll decide to shape cookies and then bake them for a few minutes.
Ingredients
maple syrup or honey if not vegan or agave or coconut blossom syrup
almond butter…you could of course use any other type of nut- or seed butter you enjoy…just make sure to taste the dough before baking to make sure it’s the right sweetness and not too bitter (can happen with tahini)
almond flour…and yes you can also use oat flour or another nut flour if you want to. I used blanched almond flour, if you don’t have almond flour you can just grind some cashews or other nuts in your blender until they turn into dust or flour
water…or you can use almond milk to add another almond ingredient
dark chocolate…I use 85% and pretend there’s no sugar in it and it doesn’t make me jittery
salt…to remember that not everything is sweet in life
Directions
Preheat your oven, mix the ingredients together, resist eating the entire cookie dough and bake for about 10 minutes. That’s all.

- 2 tbsp maple syrup
- 3 tbsp almond butter
- ½ cup almond flour
- 2-3 tbsp water
- 2 tbsp/ 20g choppped dark chocolate
- pinch of salt
Instructions
- Preheat your oven to 180C/350F.
- Mix the ingredients, adding the chocolate chunks last.
- Line a baking sheet with parchment paper or grease it. Shape cookies with your hands.
