Never thought I’d share a potato recipe ever, but the other day I got the cutest tiny potatoes and here we are. Was sad to say bye bye to them, but this recipe for new potatoes is SO worth it. Seriously, I just made a recipe for the most delicious garlic baby potatoes and I can’t tell you how excited I am. Can you tell? I then served them with some salad and a lot of yogurt garlic sauce, which as you’d expect considering how much I’m in love with garlic – was a really good decision.
These are perfect for dinner, might be a good starter or a side, depending on how hungry you are.
Garlic Baby Potatoes Ingredients
Potatoes. And to be exact, you need new potatoes. As we’ll be boiling and searing the potatoes and they need to keep their shape, mkay? New potatoes are also cuter and sweeter than your regular old starchy potato. Now that I said it, I have an old one and I think I will be cutting it up in pieces and planting in the garden to get some new new potatoes. If you’ve never grown potatoes, this is the ultimate upcycling, you don’t need glue, cans or toilet paper. You put a piece of an old potato and you get baby ones. In months, but still worth it.
Besides potatoes you need:
- olive oil, you can also use butter if you want
- fresh parsley or whichever herbs you love (dill will be great too)
- garlic
- scallion
- salt and pepper
How To Make Garlic Baby Potatoes
Now that you’re armed with all of these, nothing can stop you from making the recipe for these sweet delicious garlic baby potatoes!
The first thing you do is wash them thoroughly! I left the skin on, so this is a must here. If there are any larger potatoes, cut them in halves or to make bite-sized pieces.
Then you boil them. Add to a cooking pot with water to cover, add some salt, and bring to a boil. Reduce the heat a bit and cook for about 15-18 minutes or until the potatoes are fork-tender.
Then add to a pan with some olive oil, salt and pepper and sear for 2-3 minutes on each side (stirring or flipping once). Add in the garlic and the scallion and saute for 1-2 more minutes.
Last, add in the thinly chopped parsley and stir it through. You’re ready!
How To Serve The Recipe For New Potatoes
Honestly, I thought the recipe is great as is, but I did have the garlic baby potatoes with some salad and a yogurt garlic sauce. To make it you need 1 cup yogurt, 2 garlic cloves and salt. Mix these and dip the potatoes in the sauce.
These will also be great with some feta cheese.
And if you’re hungrier, you can turn it into a bigger meal with some fish/meat, salad and the sauce.

Garlic Baby Potatoes

Ingredients
- 450g/1 pound new potatoes, washed, skin on
- 4 garlic cloves, minced
- 1 scallion, thinly chopped
- 4 tbsp fresh parsley, thinly chopped
- 2 tbsp olive oil
- salt and pepper
Instructions
- Wash potatoes, I kept the skin on and cut the bigger one’s into bite-sized pieces.
- Boil the potatoes with some salt until fork-tender, about 18 minutes.
- Add cold water then drain the water off.
- Add to a pan, add salt, pepper and olive oil, make sure the potatoes are covered.
- Let fry on one side for 2-3 minutes. Then flip and let the other side also brown for 2-3 mins. Then add the scallion, garlic and stir once for 1-2 minutes. Add the parsley, stir once more and serve with yogurt garlic sauce. For the garlic sauce: 1 cup yogurt, salt, 2 cloves garlic, mix and add more salt if needed.
