Easy Breakfast Veggie Wraps – Beauty Bites

When you hear the word veggie, do you think of vegan or vegetables? I think of vegetables and here I mean vegetables, these easy breakfast veggie wraps are not vegan. Exhibit A – there are eggs in them.

These were born out of my desire to eat more vegetables at breakfast. I know, if I say the word vegetables one more time it will be some type of a record. I don’t always feel like a smoothie in the morning, but I love how it makes me feel. Energetic, yet full. And I need that energy to do things. Basically, I wanted something savory, yet light and filling.

So, these breakfast veggie wraps are really easy to put together. The first time I made them was last year, when I was on vacation in Greece and trying to stay away from all the pastries. I didn’t have all of my “equipment”, but we did have some hard-boiled eggs, vegetables and a knife. Tada – a healthy breakfast full of vegetables. This recipe has some healthy fats, protein, fiber and lots of antioxidants. It’s low in carbs, and also gluten-, grain-, nut-, dairy- and soy-free. I think it’s even paleo.

Here’s what you need:

Breakfast Veggie Wraps Ingredients

Eggs. Hard-boiled are the best choice here.

Vegetables. (did I win the record yet?) We need avocados, tomatoes, cucumbers, radishes, scallions. Basically, whatever is available! Yes, I realize most of these are botanically considered fruits.

Basil and olives. To add some flavor and salt.

Lettuce. We need some lettuce leaves for wrapping!

How To Make The Breakfast Veggie Wraps

If you don’t have any boiled eggs – it’s time to boil some. I’m not an egg expert, I just put however many eggs I want in a cooking pot with enough water to cover them completely. Then bring to a boil, remove lid and set timer to cook for 10 minutes.

During that time – it’s time to wash and cut the vegetables! Wash and drain lettuce, I do it one leaf at a time after I almost ate a slug one day. Then the tomatoes, basil, olives, cucumbers, scallions and radishes. Chop all except for the lettuce.

Add to a bowl and toss with salt and pepper.

Then arrange on the lettuce leaves – first the vegetables, chopped eggs on top and then some more vegetables. Crush more black pepper on top if you want and you’re ready!

Meal Prep

The only thing I’d make ahead of time for the easy breakfast veggie wraps is the eggs, everything else you can just chop in 5 minutes.

Ingredients

  • 1/2 cup cucumber, chopped
  • 1/2 cup cherry tomatoes, halved
  • 3 radishes, chopped
  • 1 scallion, thinly chopped (optional)
  • 1/2 avocado, chopped
  • 1-2 tbsp olives, thinly chopped
  • 2 hard-boiled eggs, chopped
  • handful basil leaves
  • 2-3 lettuce leaves
  • Salt and pepper

Instructions

  1. Boil the eggs. (if you don’t know how – details are in the post)
  2. During that time wash lettuce, one leaf at a time, then leave it to drain on a dishwasher rack or pat it dry with a clean kitchen towel.
  3. Then wash and chop the tomatoes, basil, olives, cucumbers, scallions and radishes. Add to a bowl and toss with salt and pepper.
  4. Then arrange the lettuce leaves – fill first with the vegetables, chopped eggs on top, and then some more vegetables.
  5. Your easy healthy breakfast veggie wraps are ready!
