The best things in life are free…I guess, whoever said that hasn’t had to pay for blueberries this year, but let’s just go with it. Because this is the best blueberry smoothie and you can easily make it with only 3 healthy ingredients: blueberries, banana and some cashews. And water, which I didn’t count under ingredients because it’s water. It’s gluten free, dairy free, paleo and it’s vegan.
You’ll Love This Blueberry Smoothie
This delicious antioxidant-rich blueberry banana smoothie makes the best healthy snack and it’s so good! I’ve been having it in the morning, the afternoon, whenever I crave something…It’s refreshing, it’s cold and it’s sweet…what more can you ask for?
3 Ingredients Are More Than Enough
Blueberries. Blueberries are among the healthiest foods we eat! They’re rich in anthocyanins, which are powerful types of antioxidants and are also the pigments responsible for the color and health benefits of blueberries. I used frozen blueberries in the smoothie and that made it so refreshing! However, if blueberries are in season when you make the smoothie, you can also use fresh ones. In that case, make sure that the banana you use is frozen…One of them just has to be. Btw. freezing fruit is a great way to preserve it – it preserves the flavor, the nutrients and it’s super easy to do.
Banana. As mentioned, use a frozen banana if you’re not using frozen berries. Otherwise, go for the fresh banana. Frozen bananas will make the smoothie cooler and a bit thicker. Bananas are a pretty sweet fruit and that makes them great for smoothies. They’re loaded with fiber, magnesium and potassium, which regular diets these days lack.
Cashews/ Cashew milk. So the cashews need to be soaked. The reason I used soaked cashews and not nut milk is because I usually don’t drink any milk. I seem to be allergic to all varieties at the store, so I just make my own cashew milk. However I realized I never really drink it, so I just add soaked cashews to the recipes I’d use the milk for and add water to blend. You can definitely just add your favorite milk instead of cashews and water or cashew butter and some water if you don’t want to soak cashews. Otherwise, cashews are great for you. They’re rich in several important minerals like zinc, magnesium and iron and you need to eat them!
How To Make A Blueberry Smoothie
To make this blueberry smoothie the same way I did it, you’ll need to have soaked cashews. I used about 1/4 cup and soaked them overnight in water. If you forget about it, you can also soak them for 20 minutes in hot water. Otherwise, read below for substitutions.
Add all ingredients to your blender and make sure that at least one of the fruits is frozen. Cover to 2/3 with water and blend. If needed add more water or more fruit to change the consistency of the smoothie.
No Soaked Cashes, No Problem
You can make the blueberry smoothie using:
- cashew butter and water
- 1/2 cup of your favorite milk
I really hope you make and enjoy this tasty simple blueberry smoothie!
